This is one of my most popular recipes and several of my regular clients often request that I make it for them. It was one of my aunt’s favorites back in the 1960s, and it recently has seen a resurgence in popularity.
Don’t be dissuaded from trying this recipe if you do not like bottled green goddess as this tastes completely different. It is fresh, full of herbs and quite tasty.
Green Goddess Dressing
Makes 3 cups
Allow 30 minutes prep time
1 cup mayonnaise
1 cup chopped scallions
1 cup chopped basil
¼ cup fresh lemon juice
2 teaspoons chopped garlic
2 teaspoons minced anchovies
2 teaspoons kosher salt
¼ teaspoon ground pepper
1 cup sour cream
In a food processor or blender, place all of the ingredients except the sour cream and purée until a smooth paste forms. Fold in the sour cream until smooth and lumps are removed. Adjust seasonings to taste.
Serve over bibb or butter lettuce–or as a dip with tomatoes, cucumbers, avocados or any of your favorite vegetables.
Tina’s Tip: The dressing will keep in the refrigerator for 7-10 days.
NOTE: It also tastes good with potato chips, so if you need something to snack on during a football game, keep this in mind.
