It’s hard to believe that I last posted in early November, and now the month is almost over. I imagine that—like me—you are probably thinking about Thanksgiving. Apple, Fennel, and Grapefruit Salad

fennel saladPeople often think salads must include lettuce, but this is a favorite of mine for plated events in the spring or fall.

At events, the salads are often placed on the table prior to the guests sitting down. Salads might sit for as long as 10 minutes before all of the guests arrive, and the beauty of using fennel and apples in this situation is that they do not wilt—or at least not to the extent that leaf lettuces do. Last fall, one of my clients got the new Barefoot Contessa Cookbook (Barefoot Contessa Foolproof), and in looking through it we both were intrigued by Ina Garten’s recipe for carmelized bacon.

I borrowed the cookbook for the weekend, and because I had all of the ingredients at home, I tried the recipe—but I played with it a bit, of course.
