Easter comes early this year, and I guess it kind of snuck up on me, because I’m not sure yet what my plans are this weekend. I’ve been busy getting ready for the Boston Marathon (more on that next week!), but here’s a recipe I was thinking about making for Easter dinner. It’s one I recently prepared for a client’s 60th birthday dinner party: Grilled Lamb Chops.
Here’s an adaptation of a recipe I first made while studying at the Western
Culinary Institute in Portland, Oregon. I recently made them for a school
fundraiser that I catered. Other items on the menu included charcuterie and

Fresh salmon is still plentiful in the Northwest, so I’m going to post a couple of recipes for salmon this week and next.
A friend of mine was recently talking about how much she liked the salmon patties they sell at Wild Salmon Seafood Market. I like them too, but I took that as a personal challenge to post my own recipe.
I took this photograph a little while ago and meant to post the recipe right away, but then I got busy with catering events. It’s still possible to find some fresh local strawberries, however, or you can always substitute fresh peaches, blackberries, blueberries or raspberries. Or use California strawberries if you prefer.
